Enter the Quinoa Glow Bowl—my answer to post-holiday sluggishness with a nod to the bold flavors of Southeast Asia. After months of setting up a new restaurant in Australia (details still under wraps—watch this space!), I’ve been inspired to blend the wholesome vibes of Aussie produce with the zesty, aromatic punch I’ve come to love here in Singapore. This dish is all about balance: nourishing ingredients to get you back on track, plus a little spice to keep things exciting.

Recipe: Quinoa Glow Bowl with Lemongrass-Tahini Dressing

Serves: 2

Ingredients:
For the Bowl:

  • 1 cup quinoa (rinsed)
  • 2 cups water or low-sodium vegetable broth
  • 1 medium sweet potato, cubed
  • 1 zucchini, sliced into rounds
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric powder
  • Pinch of salt and pepper
  • 1 avocado, sliced
  • Handful of fresh cilantro or Thai basil, roughly chopped
  • 1 tablespoon toasted sesame seeds

For the Dressing:

  • 2 tablespoons tahini
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemongrass, finely minced (or lemongrass paste)
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, minced
  • 2-3 tablespoons warm water (to thin)
  • Pinch of chili flakes (optional, for a kick)

Method:

  1. Cook the Quinoa: Bring the water or broth to a boil in a small pot. Add the quinoa, reduce to a simmer, cover, and cook for 12-15 minutes until fluffy. Set aside to cool slightly.
  2. Roast the Veggies: Preheat your oven to 200°C (400°F). Toss the sweet potato and zucchini with olive oil, turmeric, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, flipping halfway, until golden and tender.
  3. Make the Dressing: In a small bowl, whisk together tahini, lemon juice, lemongrass, honey, garlic, and chili flakes (if using). Add warm water, a tablespoon at a time, until it’s smooth and pourable. Taste and adjust seasoning.
